Overnight oats are a popular pick when it comes to spring / summer breakfast ideas.

They are perfect for busy mornings because they can be made the night before and easily taken on the go.

Better still, it’s hard to get bored of overnight oats because the flavour combinations are pretty much endless!

Here I am sharing 3 different overnight oat ideas, hope you enjoy!

 

Overnight apple/pear oats with orange & honey yoghurt

Serves 1
Pre: 1-24 hours
Cooking: nil

Ingredients
Oat mixture
1/3 cup oats
½ tbsp. chia seeds
water or milk of choice for soaking
handful raisins or currants, optional
1 small apple or firm pear, grated
pinch cinnamon/ginger

Orange & Honey Yoghurt
2 tbsp. natural plain yoghurt
1 tbsp. orange juice
1-2 tsp. orange zest
1 tsp. honey, adjust to suit

Toppings
1 tbsp. mixed nuts and seeds (almonds, flaxseed, sunflower seeds or LSA)
fresh berries

Method

Place the oats, chia seeds and raisins/currants in small bowl, cover with milk or water. Place in the fridge covered overnight.

In the morning add the grated apple/pear and spices of choice and mix well. Add extra milk or water if needed to loosen the mixture.

In a separate bowl mix together the yoghurt, orange juice, zest and honey and combine well.

Top the oat mixture with the yoghurt and top with nuts/seeds and fresh berries.

 

Strawberry, Turmeric & Coconut Overnight Oats

Serves 1
Pre: 1-24 hours
Cooking: nil

 Ingredients
Oat mixture
1/3 cup oats
2 fresh dates, pip removed and diced
1 tsp. turmeric powder, optional
1 tbsp. shredded coconut
coconut milk, to soak

Strawberry puree
1 cup strawberries, diced and top removed
1-2 tsp. honey or maple, optional
1 tsp. lemon zest, optional

To serve
blueberries
shredded coconut

Method

Place the oats, turmeric, shredded coconut and dates in small bowl, cover with coconut milk. Place in the fridge covered overnight. In the morning, loosen the mixture with extra coconut milk, if needed.

To make the strawberry puree, add strawberries to a blender and blend until smooth, add honey to sweeten, if needed and stir though the lemon zest.

To assemble, add 1/3 of the strawberry mixture to the base of a small jar or bowl, top with a ½ of the oat mixture and blueberries, repeat with a layer of strawberry mixture, followed by oats and blueberries. Top the final layer of oats with the rest of the strawberry mixture and finish with a sprinkle of coconut.

 

Spiced Chocolate and Banana Overnight Oats

Serves 1
Pre: 1-24 hours
Cooking: nil

Ingredients
Oat mixture
1/3 cup oats
1 small banana, skin removed and mashed
½ tbsp. chia seeds

Spiced milk
¾ cup milk of choice
1 tbsp. cacao or dark chocolate
¼ tsp. cinnamon, ground
¼ tsp. ginger, ground
pinch nutmeg, group
honey or maple syrup, to sweeten

Topping
Cacao nibs
Raspberries
Peanut/almond butter

Method

In a small bowl, add the milk, cacao/cocoa, spices and honey/maple, and whisk until well combined, adjust sweetness to suit.

In a small bowl/jar mix together the oats, mashed banana and chia. Pour over the chocolate milk, enough to cover the mixture and stir well. Cover and put in the fridge overnight. Place the remaining chocolate milk, if any, in the fridge also.

In the morning, loosen mixture with extra chocolate milk if needed and top with cacao nibs, raspberries and a drizzle of peanut/almond butter.
