If you are on the hunt for a yummy treat which still offers some nutrition, you will not be disappointed with these cookies!
Gluten-free Chocolate Chickpea and Strawberry Cookies
Serves: 8-10 cookies

Cook:15-25 minutes
Ingredients
1 cup canned chickpeas, well rinsed
1 tbsp. brown rice flour (any flour is fine, I used cricket powder)
1 tsp. baking powder
1 tbsp. cacao powder
1?4 cup raw honey or maple syrup
1?2 cup hulled tahini paste (any nut butters)
1?2 cup strawberries, chopped (or any dried fruit)
1?4 cup chocolate, broken into rough pieces
Method
Preheat oven 180C, line baking tray with non-stick paper.
In a food processor, add all ingredients, apart from strawberries and chocolate, mix until smooth.
Spoon into a bowl and gentle fold the strawberries and chocolate.
Spoon heaped tablespoons of batter onto the prepared tray about *1-2cm apart and flatten slightly with a fork Place in the oven and bake for approximately 20 minutes.
Cool and eat!!
