Ingredients for the chicken:
- 16 whole chicken cut into ¼
- 1 bunch thyme
- 1 lemon
- 2 tsp. sea salt
- 2 tsp. pepper
Zhoug ingredient:
- 2 bunches of coriander, washed
- 3 large green chillies
- ½ a lemon, zested
- Juice of one lemon
- 4 tbsp. olive oil
- 2 tsp. sea salt
Method:
Pre-heat the oven to 180C. Place the chicken on a baking tray and sprinkle with thyme, lemon juice and seasoning. Place in the oven for 20-25 mins.
In a food processor blend all of the Zhoug ingredients till smooth.
Serves the chicken on a plater drizzles with the Zhoug.
